Hi,
As a mere male who has just discovered the joys of cooking [truly!] I am having some trouble regarding parchment paper as well. Here in Australia I haven't seen “parchment paper” anywhere. Is it the American version of what is known here as “non-stick cooking & baking paper” ?
Help! I need to know. And what is the advantage of using parchment paper over say just greasing the pan/container like our Grandma's used to?

From what I can tell from images on Google, ladokola looks to be what's called parchment paper in English which is often used in French pouch-cooking techniques. This is probably an ideal substitute if no big plant leaves are available. (The leaves do provide a nice “green” taste to the dish, though.)

Jo I have a question on the recipe. I was writing a list of stuff to buy for when I am going to make this tomorrow, but on reading the recipe I saw you mention parchment paper. I am not entirely sure what that is. I have regular baking paper (which is the brownish kind) and I have a little bit thinner baking paper which is white. Is that maybe also called parchment paper?

Have you tried making pizza on parchment paper? I've done it a few times and it generally works. Not sure if it's my dough or the parchment paper but the only problem is the pizza likes to shrink back after I stretch it out. The pizza ends up being a little thicker and smaller. No mess though!!

We made these today with our two year olds using parchment paper (we're in the UK so no wax paper around…) and they were great ! My hubby just kept checking that the shavings were melting as he ironed… I did pop the crayons (used crayola pinks & reds) in a dish on the radiator before sharpening with a BIG sharpener & all was well. We pressed them under heavy books & then stuck them to our window with a small blob of Pitt Stick glue… Fab!

In the original recipe, Nigella lined a rectangular cake pan (approx. 13 x 9″) with parchment paper. She let the pan cool on the wire rack (tipping the gingerbread before it cools out might not be a good idea with a large pan). She also frosted the gingerbread while everything was still in the pan, then lifted out the parchment paper after the frosting had set and cut everything into nice-sized chunks. Just remember, that for a larger pan you will definitely need more baking time.
